Ingredients
4 Chicken breast
½ Lb Porcini Mushrooms or any other type
12 Units Gulf Shrimp
Extra virgin olive oil
1 Tbs. Garlic
1 oz. Tarragon
1 oz. Cognac
Salt
Pepper
Demi glace
1 oz. Heavy cream
In a warm sauté pan with extra virgin olive oil, flour and sauté the chicken breasts until semi cooked. In a separate pan, sauté 1 tbsp of minced garlic, 1/2 lb. of porcini mushrooms, and 12 fresh gulf shrimp. Season with salt, pepper, and tarragon. Once sauté is well enveloped, deglaze/flambé pan with cognac. Add demi glace and heavy cream and allow the sauce to reduce and thicken. Add pre-sautéed chicken breasts and bake in the oven until chicken is fully cooked. Plate along side a favorite starch and vegetable and enjoy with a medium bodied red wine of your choice.
